What your need :
Your favorite choice of alternative meat (my favorite is beyond meat)
Tomato Paste (2 tablespoon)
Two Cans of peeled tomatoes
Sweet onion (full chopped)
Fresh garlic (4 cloves chopped)
Your favorite seasonings
2 packages of extra firm tofu
Your favorite vegan cheese
Pyrex glass dish
-Preheat oven to 375F
-First your going to take a large pot, and boil water. I always dash salt in the water, no olive oil. Put your lasagna pasta in their to cook al dente. Pay attention to make sure the pasta isn’t cooked all the way! After its cooked al dente, lay it out on a flat surface.
-Let’s prepare your ‘meat’ now. In a sauce pan, you are going to heat up the pan with olive oil. When the pan is hot, sautée your chopped sweet onions until golden, then add your chopped garlic. Add your fake meat and break it apart with your spoon. This is your moment to add your favorite spices to the meat. I usually do salt, pepper, and Italian seasoning.
-As your meats cooking, switch to a big pot on a medium to low flame. You are going to pour your two cans of peeled tomatoes, your tomato paste, and now your seasoned meat. As thats cooking and blending, put the flame on low.
-Time for your vegan ricotta. Super easy to make. Take your two packages of tofu and drain and squeeze out the excess water. I usually use a paper towel to help squeeze out the water. Your going to throw your tofu in the food processor, some chopped up garlic, parsley, and your other favorite seasonings. I used garlic and herb. As your mixture is processing, pour a little bit of creamer to the mix until it has a whipped consistency.
-To assemble, take a pyrex glass dish, and lay a layer of your meat sauce at the bottom. Then arrange and lay down your al dente pasta, mine took four sheets lengthwise. Spread your vegan ricotta mixture on top. Top that off with your favorite vegan cheese, then your meat sauce. Repeat layers ! Once you get to the top layer, coat in meat sauce and your vegan cheese.
-Bake in preheated oven for 25 mins. Remove foil, and bake an additional 18 minutes. Cool for 15 minutes before serving.
